Living the Dream Brewing Company is a hidden gem in Highlands Ranch, Colorado. But this brewery is no secret to those who love a well-balanced, true to style craft beer. Going on two and a half years, they have already increased their brewing system and are releasing some specialty beers that they have never brewed before, including their first ever sour beer.
Boom, Gose the Dynamite is a tart German-style wheat beer brewed with coriander, Red Hawaiian sea salt and a touch of blood orange. And the name exemplifies the beer to a T. Sours aren’t the only thing this brewery has lined up. With over 40 barrels, ranging from cabernet to gin to whiskey, head brewer Jason Bell has been aging up some amazing beers. Unlike a lot of breweries, Jason has been aging beers in these barrels for a minimum of 6 months – and won’t tap those beers until they are aged to perfection. Several breweries try and speed up the process by released barrel-aged beers too soon. He wants to make sure they are maturing the beer and keeping it in the barrels as long as possible to get it to its finest quality before releasing them. This aging could be several years for some of them!
Aside from releasing new styles and working on their barrel project, Living the Dream is pushing distribution and starting to bottle & can more beers. Keep an eye out for their annual Christmas beer, the Festivus Fireside. This delectable treat is an English Old Ale made with treacel (a British molasses) which is not as spiced or sulfury as some molasses beers. The Festivus Fireside is aged differently each year, with this year’s batch soaking up in bourbon barrels. This is a beer you will want to have around for your holiday gatherings! Cheers!
